I don't know how exactly to do it but I don't wanna to skip this process though.
the problem is I don't know how to and where to grip it --head or shaft ? for it's slippery off my fingers that i can't hold it 5 mins. and when I touch my dick just to grip it firmly--it generally goes full erect and hurt.

I really don't see how you can even grip your head to stretch. If you want to stretch properly, you need to grip your shaft. About having slippery fingers, I recommend body powder... works like a charm.

I have been gripping my shaft, right behind my head. You can also use toilet paper to keep a grip.

I agree with the Baby powder suggestion it works great. I also think a basic stretching routine that you can follow everyday is important too. Here is a sample routine. After a few weeks I think you should change it up to something a little more intense. I would try this first.
Basic Stretching
In a seated position prepare yourself for your stretching routine. With an ample supply of Baby powder on you hands grip your penis just below the head. Do 3 sets of these:
With each one of these slowly work up to a maximum stretch.
Pulling straight down: Once at maximum stretch hold for 30 seconds
Pulling straight down to the right: Once at maximum stretch hold for 30 seconds
Pulling straight down to the left: Once at maximum stretch hold for 30 seconds
Pulling straight up: Once at maximum stretch hold for 30 seconds
Cranking Rotary: Once at maximum stretch hold straight in front of you crank or rotate your penis for 30 cranks.
This is one set.

Hey DLD...not to steal the thunder from the original poster, but I've been following your beginner's stretch routine and I physically cannot do the "cranks" without becoming erect...is this a normal outcome, and what can be done to stop this?

Hmmm...I always make the suggestion to wack it first.

So whacking off regularly doesn't effect gains? I haven't since starting this just because I thought it might hurt gains.
No, he meant when it gets erect, take a stick and whack it!
That'll teach it. After a few times, it won't do that again :)
On the busting a nut hurting gains front, it's never been proven, and many many have gained without refraining...

Masturbate so you're flacid and can't easily be aroused while recovering. Stretch during this time period. After stretching do a nice hot wrap for 2-5 minutes, OR take a shower. When you get out, just log onto your favorite adult pic site and you'll probably start to feel erect again- but don't masturbate or anything... just stay on the site long enough to get erect/semi erect. Now the blood is back flowing properly into your penis.
Then work girth later on preferably before going to bed.
